Help me understand Photostream

I really like keeping my photos organised in iPhoto but hate the whole cable thing..

Will I be able to:
Take photos and see them appear in iPhoto in real time (or when my iPhone accesses wifi), and then drag them from the photo stream in iPhoto to the events I would like them to stay in? (before 30 days/1000 photos is up).

Is there a option to auto delete from the camera roll when they transfer to iPhoto?

you've pretty much got it, but when the photo appears in photo stream in iPhoto a copy is automatically added to the local storage of the computer so even after 1000 photos/30days if you didn't add that photo to an event you wouldn't loose the photo.

I don't think it will auto delete from the camera roll but you can mass delete photos from the camera roll anyway.
