Help needed to COMPLETELY erase all texts adn emails from iphone and itunes

Hi, I need to COMPLETELY erase all text and email history from my iphone and itunes. This needs to be absolutely thurough. I still need to use my iphone after the erase but all prior history must be erasaed. Any help?

Just recover your iPhone when it is attached to iTunes and DO NOT restore from backup.

Can you provide the steps to perform this function. Sorry, I'm not very tech savvy

You plug it to itunes and hit restore.
When it asks you setup as new.

Wouldn't it also be prudent to delete any old stored iPhone backups? That info is probably in there as well.

The backups are on the computer, not saved in the iphone.
