help restoring and unlocking at the same time

hi,

i'm selling my 2G iPhone, but need to restore it and erase all data etc.

Its currently running 1.1.4 and is locked, but i want to sell it unlocked running 1.1.4.

Whenever i try to restore in iTunes i get told that i can restore and update to 2.x.

How can i securely erase my iPhone and also keep it on 1.1.4 and unlocked.

I am running OS X.

Also, can i unlock after updating to 2.x (that would be the easiest option i guess).
