In setting up a new iMac fresh out of the box, I want to bring over my various programs and data from a Time Machine backup, but I don't want to bring over any "old" OS stuff or settings that will shove aside the fresh new OS from Apple that will be on the new machine.

Can anyone supply me with a step by step and is there an Apple video or cheat sheet you can point me to that demonstrates precisely what to do in what order?
