I get the following error: You must define a width value for the encoded video which is divisible by 16.
I don't know where to go to change this value, or what to change it to! Ugh!
Any suggestions?

You have to change the dimensions which is under the Video tab. Tell me the dimensions of the original video and the current dimensions of the output video and I might be able to recommend a good size.

Also might want to think about switching to MPEG Streamclip or Handbrake

http://handbrake.fr/

They seem to be easier to use than ffMpegX.
