Okay, so here's the deal. The silence switch got pulled off by a silicone case that I had, so I took it to the Apple store and got a replacement. However, before I did this, I obviously restored the iPhone. I get up to the genius bar and the worker looked around a bit on my springboard, and then said "Where's your settings?" (Whoops!) He overlooked that fact, but the problem still arises that I can't find the folders nor any of the applications that were in the folders after re-jailbreaking the phone and downloading categories again (Settings, Categories, Winterboard, and AppStore are all on SBSettings and I can access those). The apps that I had out of folders are still on the springboard. What can I do?!

If you can access Cydia, install SBSettings and use it to unhide your icons.

Go to Settings> General> Restrictions and enable this. This will unhide all your apps. You can then go back and turn restrictions off.

Edit: Just realised you said you don't have access to settings. Bossprefs with poof will work

Alternatively, install SSH after re-jb (or diskaid on your comp. to see the iphone file structure via the usb cable from your computer) then navigate to /user/library/preferences/ and locate and delete a file called com.apple.springboard.plist then respring.

The preference file will 're-generate' after the respring, and ALL your Categories icons will automatically unhide.

All Categories does to 'hide' your icons is edit the above file. This is one of the files that gets backed-up everytime you sync, so if u 'restore' your iTunes iphone backup (not to be confused with firmware restore) after you do the fw restore, this pref file will be put back into your phone and prevent you from seeing your icons.
