I just received my iphone on O2 in the UK i want to jailbreak it and unlock it using redsn0w and ultrasn0w so that i can use it on vodafone.
What i am wondering is do i do it with no sim card in it or with the O2 one?

Go to iClarified.com and follow their tutorials for unlocking.

The short answer is that it you can leave the SIM card from O2 in. If vodafone doesn't have 3G you should turn it off on the iPhone before jailbreaking and unlocking.
 
Let it activate with the official simcard to make sure the push notifications work fine.
Then when you're done jailbreaking and installing ultrasnow swap to whatever sim you want.
