Curiosity got the best of me so I upgraded. I only lost 3 of my iOS apps in the upgrade. I will accept that.

This is a matter of when the app was downloaded and installed. I had an old IPA file for Sirius XM hanging around. That one will run and install but newer versions will neither install or run. Apple changed something with the IPAs themselves some time between January and March that causes the apps not to run in macOS.

Apps targeted an older iOS version (and using an older SDK) are not affected and still installable, the ones targeting recent versions( >= iOS 14 in my testing) will not be installable.
