Is there a way to hide stock apps such as messaging app etc? I read a convoluted method on the web but it only lasts till you reboot..Is there any app that does this without jailbreaking? with jailbreaking can this be done?

There is no way to do that without jailbreaking. If you are on iOS 7.1, there is no jailbreak available at this time.

I'm still on 7.0.2 .If i end up jailbreaking it, what app should i use to hide the "phone" app??.

Is this the convoluted method you were talking about? I was able to do that without much of a problem on my iPhone 5. And I don't reboot often, so it works well enough for me. A note though, you have to be on 7.1 and you'll need to hide more than one app (to make the folder) but it does not require a jailbreak (if you prefer that).

I have quite a few apps installed on my phone and
suppose i want to use an app on the last screen, it takes forever for me to scroll to the last screen

is there any way to hide some of the apps or group them into folders, just like in iPhone?

What do you mean just like in iPhone? You can already create folders and use those.
