Is there such an tweak to stop me accidently updating a certain app that I need to keep the current version of?
 
Open iFile and go to var/mobile/applications/(whatever app), and delete the iTunes metadata file. Open the app store again, and the update will be gone. 🙂

What if you want to update it later? If you ever plan on updating that app again can you just move that file to a safe place and then when you want to update the app, you copy it back? Or is it easier to just delete the app and then install it again?
 
i delete the metadata file, and for reasons unknown to me, when that specfic app is updated again, it lets me know thru appstore.
