Apologies if this has been covered but is there anyway to set a particular Apple TV or HomePod as the Hub and others as Standby?

No. You can only set Apple TV to either be able to act as a hub or not. You cannot determine (tell) which will be.

Terrible. My Home Hub will randomly switch and I see all my HomeKit accessories start to drop off one by one. They gotta give us the option to select one and make it stick.
I have a feeling this once was a thought. If you go to the list of hubs in your Home settings, there’s an arrow to the right indicating you would be able to enter a sub menu for the Hub but it’s always been grayed out 🤷
