I don’t know what’s going on with this. Was very stable in iOS 12. It’s very laggy and then today all my devices are taking forever to update. Then when they do I get “no response”

Freezes a lot too. I’d have to close it out and re open.

***Edit*** Reboot fixed it but it’s been laggy since iOS 13. I feel like I’ve rebooted my phone 100 x in the past week lol.

Same exact issues here since updating to iOS 13. I found some others having similar issues. Here's what we've got so far:
  1. Seems to be specific to the Home App. Home+ 4, iDevices, Eve App seem normal.
  2. I have noticed that if I disable WiFi and use Cellular (while at home) the Home App works basically like it did in iOS 12.
  3. If I'm away from home and on WiFi the Home App also seems to be OK.
  4. It's definitely related to iOS 13 because I have devices still on iOS 12 that are acting and working just fine.
  5. I thought maybe it was related to my iPhone 11 Pro but I upgraded an old iPhone X to iOS 13 and it has the same problem.
Some other threads started by the same person regarding this issue. This is where I found the idea to try disabling WiFi. The poster here says that disabling Bluetooth fixes the Home App issue - I did NOT find this to be the case. For me it's disabling WiFi, as you can see in the Reddit post.

Try disabling WiFi and report back if that helps. Also, out of curiosity what router / access points do you happen to be using? Myself and the poster below are both using UniFi USG and UniFi APs.

Then we need to get Apple's attention because this needs to be fixed.

Interesting and now that you mention it, it does seem more stable remotely.
Of course it’s not acting up now but next time it does, I’ll disable WiFi and see what happens.

I’m using Eero with 4 Eero Pro routers and 2 Eero plug in beacons with a gigabit Verizon FiOS modem. Worked a charm with iOS 12.

I have Home +4 and Eve as well. I’ll test with those two as well.

I had similar issues including a ton of No Response. I finally wiped the Home. Created a new Home with a new name and re-added all accessories. This fixed it all for me. Something about the new ATV multi-user and token management is my best guess. I have 100+ devices across several hubs including HomeBridge. Took a few hours but hadn’t rebuilt from scratch in years.

Just the thought of that makes me want to vomit lol. I had to do that twice a few months ago. Got the dreaded “Loading Scenes and Accessories” across all my devices. Also my HomeKit setup went bonkers seemingly out of nowhere but I suspect it was from adding an old iPhone 4S to my AppleID.

There’s an app called Controller for HomeKit that lets you save a backup of your HomeKit setup (including scenes and automations). I discovered it after the fact but I’d rather not test it unless absolutely necessary.

Everything seems to be behaving today (knocks on wood)

Myself and the poster below are both using UniFi USG and UniFi APs.

Ensure multicast filtering/IGMP snooping is disabled on both your Wi-Fi and wired network. It is notoriously unreliable, especially with consumer devices.
 
Homekit really has been awful recently- I'm glad I only set up a few lights in the house and still have overhead lights on manual switches.

I tried all the standard reset things that people routinely recommend whenever someone complains about an Apple product. So I'm not asking for help, just complaining.

If Homekit doesn't improve soon, I'll be removing it all and just going back. Sad really because it worked quite well in the past

I was just about to come back on here yesterday and report that HomeKit has stabilized... but nope. A few of my automations decided to reset themselves and drop some accessories from the other automations. Same with some of my scenes. It’s really annoying to have to remember what accessories were in what automations and the conditions of the automations. Apple should let you save them to iCloud.
 
It seems like a lot of the HomeKit issues I have occur after signing out of iCloud on any one of my devices. Upgraded to Catalina on my Mac last night and after an iCloud issue, I signed out an then in and that’s when I noticed the HomeKit issues pop up. Same thing with my iPhone when I got the 11 Pro Max.
 
My Wemo devices are disconnecting every few hours. They worked well before iOS 13. I suspect it is something to do with my 3rd Gen Apple TV which is the Home Hub. There are reports of other problem with this device such as Homesharing. Some Apple Community users have reported being told that fixing bugs with the 3gen ATV is not a high priority for Apple.
Grrr!
