Wow! Really? Are the walls and floors all concrete or a material that would be obscuring in some way the WiFi signal?. . . each room should have its own router for the best connections. . .
I don't know that over-doing the mesh arrangement would lead to problems, but maybe it does. This sure seems to me like a serious over saturation of WiFi signals coming from the various mesh devices throughout your home. Even if you have a large number of connected devices to the system. Even if this number of mesh devices will work together properly, and I do not have the technical know-how to say one way or another, this is a large cost for much more equipment than should be needed.
I would suggest that you talk to technical support at Eero and discuss this with them. Someone who is an engineer and can advise you regarding your particular situation.
