I updated my HomePod to 12.1 already but I noticed today in my Home app that it says an update is available. I tried hitting update and it attemps to download it but nothing reaally happens. I don’t think a new version of the HomePod OS has been released.

Restart the device that's showing this in Home app. I noticed the same and the device restart resolved the discrepancy.
You complained of the Home app on the device you were using, offering an update after you had already updated to 12.1. That's the device to restart. However, if you're wanting to restart the HomePod then just unplug it for 30-60 seconds and plug it back in.

Restart your device. Restart the HomePod. Or, just remove the HomePod from the Home App and set up again.
