You can use the speaker just on airplay, but you cannot "disable" Siri. It still will be listening. MAybe you can change its activation phrase and that way stop it from turning on when you say hey Siri.

You can tell siri to stop listening, or toggle off listen for hey siri in the Home app.

You can turn Siri off in the Home App. You cannot change Siri’s wake up phrase.
