You really can't go wrong with any of the top tier phones these days. They can all produce good, quality images. Each one has some slightly different strengths however. The iPhone produces slightly flatter images, but has always and continues to be very good at getting white balance right. It's the master of none however, and the biggest weakness is low light compared to some others. The S8 (and the similar camera in the S7) has a slightly larger sensor, slightly larger aperture, so it's a bit better in low light. Agree that it also tends to produce richer files than the iPhone.

Overall, there's little between the two. They're both fast and capable, the larger difference will be in who's taking the picture, or if you've cleaned off your camera lens. As far as colors and saturation, both can shoot RAW if you want the off-sensor data to post-process manually. In auto the S8 tends to be a bit more saturated, but on that note, you never see SLR or mirrorless camera reviews complaining about an image being too saturated.

I carry both on a daily basis and when I have to take a picture, I use the one closes to me. Rarely do I purposefully pick one over the other. Honestly, one of the few times I choose the iPhone over the S8 is when I have to send something via iMessage, it's just one less step.
