I understand that Apple says "no" but the aftermarket says "yes". I think a HyperDrive Dual 4K HDMI 10 in 1 USB hub will work... right? is this overkill? 100% of the setup is used for "static" documents, e.g., no gaming, no streaming movies, no video games/editing... just Keynote, web, etc.

The 2017 MacBook Pro worked perfectly - two extended external monitors, able to arrange them, etc.

What's the best way to get ^that^ functionality with the new 24" Mac (desktop)

You need a DisplayLink adapter to run a second external monitor. Many docks have these built in. Check the specs before buying. Just note that DisplayLink has a bit of a delay.

Some people notice. With a quick mouse movement. Your cursor can lag behind. So, if you are trying to click something. You could overshoot the mark. Couldn’t say if it’s as bad now as on older adapters.
