by using themes or changing the dock icons, but as far as i know it can only be done in OS X Tiger not Leopard

I know you can do the bins with the folders that in Stacks. but I don't know how to do it with applications on the dock

Those are all stacks. You just put the "bin" icon as the first item in the folder the stack links to, and it shows up as the top item in the dock icon.

Also there is LeopardDocks.com, Set stack Icon & CandyBar, along with many others.

Instead of paying for Candybar, just use freeware LiteIcon instead.
