How can I restore from older backup on Time Machine

Hello,
I wanted to do a clean install of Snow Leopard before I put Lion on my MB. I have Time Machine and can backup from it and restore it all back beautifully. However I don't want to restore from the LAST restore folder, I want to restore from a previous folder. Any ideas on how to do this?
