How can I tell if my Verizon unlocked my phone?

If you can insert the Canadian sim and connect to iTunes before you leaving the US, you will see AT&T in the top status bar indicating you are now roaming on the AT&T network. Once you are unlocked you will stay unlocked. You can swap sims back and forth as needed without needing to connect to iTunes.
