I am trying to upgrade my iPad to 5.0 but iTunes is asking me if I want to upgrade it to 5.1. Is there any other way where I can specify the version I'd like to upgrade to?

You can't unless you backed up with tiny umbrella. Apple normally stops signing an OS about a week after its successor is released.
