I'm considering my first Apple Watch purchase (SE in wifi). How close does the watch need to be to the phone in order to track sleep? I don't sleep with my phone in the bedroom with me. It sits on a charger in my living room. Would I still be able to have any data on sleep habits if my watch is outside of bluetooth range of the iphone? Does it still connect to wifi normally?

As far as I tested it, you do not have to have an active connection with your phone during sleep tracking. Once it connects again, it will send the data to the health app.
