I tried to add it on apple.com, but it isn't letting me. can i do it through the apple app?
 
If you have the watch in your possession you have to call or visit a store. If you are waiting for it to be shipped, you call or go to a store when you get it.

I ordered the AW in the wee hours of the morning and the Apple Store app never offered me AppleCare so I ordered the watch without AC. I called once the watch arrived and getting AC added only took a few minutes.

Once you put the watch in your cart then start your checkout, the AppleCare choices appear lower on page, but clearly they are there.
 
you cant edit the order, you will have to get it after the fact. i just added apple care over the phone. once you get your watch, call 800-275-2273. once you speak to the rep, they will email you a link to purchase applecare. once you pay via the link, its done and it will reflect so in your support profile. just dont wait too long or they may ask you to go into the store to inspect it or run a diagnostic. since my watch delivered 2 days ago, they took my word over the phone since it was literally brand new.

Did you notice the part I wrote about wee hours of the morning? I may have missed it but when I called Apple about it and asked how to add AC later, they admitted it was hard to see and they seemed to imply they would be changing it. Perhaps what you are referring to is the way it looks today and not what I saw. On 4/10/15 at 0530 EDT it is possible they had not implemented the choices "lower on the page" that you are referring to. I asked about adding it over the phone before my watch arrived and they said they were unable to do that.

At least I was able to get AC without burning up any gas and as always Apple was a pleasure to deal with on the phone. I just went in and tried it and AC shows up as a toggle below the watch. There is no cart but there is a "buy now with Apple Pay" button. Perhaps it was there and I just didn't see it. Perhaps they forgot to include it on the first day of preorders. Since I have AC on my watch now, I really don't know or care.

Anyway the point of my post was that I was successfully able to add AC over the phone after I got my watch. It didn't matter that I had taken it out of the box. They didn't ask me to come in to an Apple Store to look at my watch first. It may be that those requirements are added later on as Apple watch becomes more available.

I just noticed the post before this and somebody was able to add AC over the phone before their watch arrived. This might also be the change they were referring to.
