Does anyone know how to add the 'Close App' icon in SBSettings ?

You mean processes? It's inside the 'More' button, then go to 'Toggles' and turn it on.

No, it's not processes. It's an icon for you to close your app like the home button but without pressing the physical home button. Anyway, I found it on Cydia, just search for 'close app'.
