I want the top toolbar to autohide so that I can browse safari completely full screen. In View from the menu bar there is an option called "Always Show Toolbar" and it is checked, however it is grayed out so that I can't uncheck it. Why can't I deselect it?

The fact that it's greyed out gives it away: it's supposed to be fixed; you can't change it. It helps playing around with the settings to see what's causing this. In this case, you can only change it outside of fullscreen mode. 'Hiding' the toolbar only hides the part with the button and address bar, there will still be the bar on which the traffic lights are.
