My iPhone Maps has been set to correctly display distance in metres and kilometres, but my Apple Watch displays in imperial. How do I change this?

That’s quite strange because it should mimic the iPhone reference zone.
Try to unpair and pair it again. 🧐

Did you check the settings in the watch app on your iPhone for language and zone ?
It should duplicates iPhone’s settings.

My watch language and zone do duplicate my phone language and settings. My region uses imperial as the unit of measure, but I prefer metric. So I have changed the specific setting on the Maps app on my phone to reflect this. I'm guessing it's another oversight by Apple that they don't allow this.
