How do I delete unnecessary icons like Stock and Youtube?

You shouldnt.
Just put them on a back page or inside a folder out of the way.

either get Poof, or SBSettings (SBSettings/More/Hide Icons). You could also set them as hidden by editing the apps info.plist file.
