I want to make an even that does not have an end time. I know I have a meeting at 6:00PM, but I do not know when it will end. How do I only make it include the start time?

You can't. Your option is to guess 'about' how long the meeting will run, pick a random number and live with it, or make a one minute long (or something similar) event titled something like "Meeting starts".
If you could make an event without an end time, iCal would likely interpret it as lasting for the rest of eternity, after all...
