How do I install the latest fresh copy of my Machook Pro? (2019 Model)

MacBook currently has Mojave, I’d like to install a fresh copy of catalina and erase all prior data from the MacBook

Start up on recovery mode (command +R).
Click on Disk Utility. (It may be under Utility Menu on the menu bar)
Erase the disk.
Exit disk Utility
Install New OS from Internet

when you say “Install New OS from Internet”, how would I go about doing that exactly?
