I'm currently on 12.1 Beta (21C5039b) and having a bunch of problems. I went into Software Update and turned off beta releases. What's the next step to getting my system back onto regular releases? Just wait for the next regular release? Is there a way to switch now without doing a full wipe of my drive?
 
This weeks 12.1 beta 4 likely will fix some issues, you could read about if it does and then choose.

Make sure you laptop is backed up to something external just in case you need to do a configuration 2 DFU restore from another M1 Mac connected by USB-C.

The short answer is: You can't downgrade from the 12.1 beta to the release 12.0.1
You will have to erase the drive, then install 12.0.1, and return your other files and apps from your backup.
Much simpler - wait for the 12.1 release, so you are back on the normal release versions.

Quite agree with @DeltaMac , you can either reinstall the system or wait for the official (stable) OS release
