There's a bug in watchOS 9.x where you can't sync music.

It's annoying because I use my AW at the gym to listen to music. If I can't sync music, the watch is useless for me.
I just bought a new AW S7 that has watchOS 8.x and after I set it up, the watch automatically began downloading the update. I rushed to turn off automatic updates but it kept downloading it. I then reset the AW immediately before the update could start.
I want to set it up again. In order to pair, I have to keep WiFi and BT on, according to the onscreen prompt when pairing the watch. Does anyone know how to keep it from updating?
