How do I put proper headers in MS Word?

Hi, i'm wondering how you put in plain ol' headers in MS Word 2008, not that fancy crap they have preset there, i can't find a way to put a header that's not one of those crappy templated headers included, which btw DO NOT follow APA or MLA style so i can't use them!
