I assumed the workout app would show my route on an apple map screen. Is that not the case?
 
The native Workout app works when the iPhone is not connected, in which case the Watch does not have access to the iPhone's GPS so that may be why Apple does not provide a mapping feature. The Watch does not have its own GPS so it needs the phone for GPS tracking. Many 3rd-party exercise apps for the Watch do provide a map, like Nike+.
 
It shouldm provide a mapping feature if you have your phone on you. That would be ace, and some way to import that data into Strava
 
It doesnt do it, even if you take your phone with you.

Other apps, like the quite brilliant Moves, will track your movement and give you a map.
