How do I switch iphone on ATT plan?

Hi,

My wife wants to upgrade her ATT phone from 4 to my 4s or 5s. What is the easiest way to do this? Can we use itunes or restore and activate with her number?

If she decides to switch her 4 to my 4s can we switch sims? Any help would be great.
