I only have a few playlists set up but they seem to work for me.

1 Rap list
1 Alternative/Rock List
1 "Good ****" list (Personal favs)
1 Chill list, or my beach cruising list

Another list I'll set up every so often is a smart playlist that has songs with a play count of 0. This way you'll hear songs you haven't heard in a while and you might rediscover some of your music.
 
I've managed fine with only 2Gb for 5 years or something

I have never deleted any of these albums off my iPod since I got them:-

Thom Yorke - Eraser
BT - Emotional Technology
Queens of the Stone Age - Era Vulgaris
UNKLE - Never, Never, Land

So that's a good 200 - 300Mb that always taken up.

My iTunes library is over 40Gb not including video (which I can't play on a 1 generation iPod Nano anyway)

I just upload a different set of tracks from iTunes every day, or the night before. Some rock, some dance, some chilled out stuff, whatever I think I might be in the mood for and then I have different music every day.

Let's face it, no one listens to music for 16 constant hours every day without taking a break to have a conversation then goes to bed but you still have more than enough storage to have WAY more than 16 hours of music to choose from with 2Gb, let alone 8Gb.

I think we will see much larger Solid State music players once the cost of flash memory come down. Apple will have the option of using either a mini SSD hard drive or NAND Flash memory, depending on the price difference to keep the costs down.
 
I have a 16GB iPhone now and it's ok, though I have 100's of GB of Music, Movies, Shows, etc. I use playlists to avoid "boredom". Specifically I use a smart playlist to auto add songs to my iPhone. If I flag a song as 5 stars, it automagically gets sync'd to my iPhone. :) I also use a separate playlist for shows, I watch 4 episodes of 24, remove and replace with 4 more.
 
I use Simplify Media on my home machine and my iPhone so I can listen to whatever I like from my home collection. I also use Pandora.
