How do you change the default program to open files?

Right now Itunes opens all my MP3s...but I would prefer Quicktime to.

Also, I want WMP to open all my avi and mpegs but quicktime does.
How do I change this?

Right click on an MP3 and choose "Get Info". In the "Open with" section, choose Quicktime, and then click the "Change all..." button and confirm.

You'll have to do it for each filetype you want associated with the program.

Ok heres a STUPID question...how do i right click with a mighty mouse?? 😱

All you need to do is lift up your index finger off the left side of the mighty mouse, and then click the right side of the mouse using any of your free fingers. The mighty mouse does not register the right click if your finger is resting on the left side of the mouse.

You have to enable right-click ability in system preferences (through the Apple icon menu on the top menu bar.) You can also press ctrl button and click the single mouse button to get the same effect.
