How do you install iOS 8.1 without enough free space? I don't want to delete my music & videos.

Use iTunes. Or if you must do it ota then delete a bunch of big apps to give you enough space.
And then once updated download and install them again.

You could do it through iTunes as said already. Or you could just do a clean install. That's what I do most of the time. Backup to iCloud then reset your phone to factory setting. Install the update and bring everything back with the iCloud back up
