Last two new iPhones, I used the transfer method. works without flaw, all I had to do is enter the 3 digit security code for the 5 credit/debit cards. Even the screens were all the same.

No way I would use another method anymore.
 
What's the difference between transfer directly from iphone vs restore from mac itunes (full backup)? Which one is faster?
 
It depends on whether or not I used a beta on the previous device with iCloud back-up enabled. If I did, I’d lean towards setting up as new. Otherwise, restore from iCloud is the way to go, for me.
 
I tried setting up my wife's new phone by restoring full backup of old phone via itunes. Unfortunately for the life of me I couldn't recall the password I set up for the encrypted backup.

I then just did the phone to phone transfer. All of the data/music/etc transferred completely. If I do an encrypted backup of the new phone I will have to write the password down.
