How do you restore you iPhone in iTunes without Updating the Software?

Using Windows 7.

"Reset all settings" from the iPhone. If you're jailbroken then it won't work for you.

So no way to Reset if you are jailbroken without having to go through iTunes which will force and update? 😱

If you restore you're forced to update to the latest firmware version.
