Just compose a message, as long as both you and the recipient have iOS5 and iMessage on, it will be sent as an iMessage.

it only becomes an imessage if the phone number your are sms'ing also has iOS 5 installed, so its not different then sending a SMS the phone makes it a iMessage, your send button changes colour i think if its acklowdeges your sending a Imessage
