Can't believe I have to ask how to set up something as simple as that, and yet I'm not seeing how to do it (other than to maybe lower the alarm sound volume all the way down) -- is that it?
 
enable silent mode

in watch control center or settings app on watch or phone.

if your watch is on the charger, it will sound the alarm even if it is in silent mode

Aha! So Silent Mode = Silent Alarm. Either I'm getting old or this stuff is getting less obvious.
Using WatchOS7 I've been using the Sleep & Do Not Disturb modes while also sleeping in the watch. Although they silence the watch, they do not turn on Silent mode. Will try turning that ON separately tonight.

silent mode is just for the watch, it prevents it from making noise.
It will also silence the dings that happen with alerts on the watch, it will still vibrate for them though.

DND turns off everything. no noise, no vibrate. Alarms will still happen.

sleep mode in iOS14 just keeps the screen from coming on bright, so your watch doesn't keep lighting up as you move in bed.

for me silent mode is on all the time, and DND is on the automatic timer so it turns on overnight.

Yeah more options with WatchOS7. When I had a watch last year for a month running beta of WatchOS6, I used to use the theater mode and silent mode at night. WatchOS7's sleep mode is perfect for, well, sleep; it also auto activates DND. It does not turn on silent mode. I'll turn ON silent mode tonight to see if that will make the morning alarm - silent.
