If you answer a call on your iPhone, how do you switch it over to the watch?

With bluetooth (car) or headphones, the speaker button turns into a sources button that allows you to switch. But this is not the case with the watch, you can only end the call.

I accidentally hit the green phone call bar and it switched over. Then I couldn't figure out how to get it back to watch. Hopefully there is a way.

You don't. It works the other way only.

That's a bummer, I hope it's in an update. I've had it come up a few times when I want to move around the room without holding/carrying my phone (both at work and at home)

Honestly, I hope there isn't an update. Talking on speakerphone is already bad etiquette. Talking to your wrist isn't much better (unless you're alone).

I think the idea is that talking on the watch is always going to be a quick substitute for talking on the phone, so it's unlikely that you'd want to switch from the phone to the watch.

I can transfer call audio to my iPhone's speaker, so why not the speaker on my Watch? I have already had several phone calls on my Watch while walking around my house, it is very convenient not to have to hold anything or have a headset on, and the callers say I sound great.

When I press the Bluetooth/Speaker button on my iPhone during a call, I have the option to transfer the call to my shower radio, which has terrible call audio quality, but not my Apple Watch???!?

As far as I know you can't send a call back to the iPad either. I can answer on my watch, pad, or phone but in the end once it goes to the phone it stays there. Its based on the idea the phone is the center of everything. Once you get to the center there should be no reason to go out but like everything else, choice is nice.

Go to Watch -> Phone -> Push Audio button at bottom of screen

Just tested this and it works, though it's not 'Push Audio', it shows the active call, with a grey bar at the bottom, you ship that up and you see the airplay logo with 'Apple Watch', tap that and audio transfers to the watch :)

Thanks for discovering/explaining this. I was crazy looking for a way to do this. Only wish it was more obvious than that.
