I thought this only turned them off while the screen is turned off though? i.e. If it's awake then the sound and vibration is back.

There is an option of silence at bottom under do not disturb in settings. This enables the phone to remain completely silent even if it's screen is on.
 
Wait, does Do Not Disturb actually block incoming calls and texts from coming through though? Or does it just stop the phone from ringing/vibrating?

I just tried it, and I can confirm that alarms do bypass this.
