I understand that the 14" M1 is the optimal choice, but the $600(ish) price difference is too much for me to balk at currently. Just wondering if anyone can provide some feedback on how the M2 Air handles basic 4K video editing. Nothing major, 5-10 minutes of footage.

Numerous posts on here and a few honest YouTubers have stated that the M2 handles that kind of work fine. The M2 can do anything the MBP can do, albeit it may do it a littler slower depending on the task being performed, amongst other factors.
 
just a few recent threads on here is guys running some 4k encoding tests and did just fine. This will be more then enough for your needs. If not 100% sure, you can always take advantage of their 14 day return policy

Yeah that's true. I'd also ideally like to upgrade to the MBP when it gets M2. Figuring that the Air will retain it's value well enough over the next 12-16 months to make some money back on a sale.

like a pro series? Because they have A 13“ mbp just in the old body. I really think for your light usage, the air is more then enough
 
I've done many video projects (both personally and professionally) on my M1 MBA with 16 GB of RAM, and it works fine - both in HD and 4K. And I have the 7-core GPU. So with your 8 or 10 core GPU in the M2, it will work fine, I know for a fact.
