As the title says I was wondering how the device handles speed-wise with being jailbroken and running emulators and roms?

Perhaps better off in the iphone Hacks section, but I'd reckon the 3GS' speed would remain roughly the same if not a tad slower while jailbroken. I've noticed that my 3G runs a little more slowly since jailbroken when it comes to processor-intensive apps.

Yeah sorry just realized that after I posted. I noticed the same with my 3G also, just wondered if it was the same with the 3GS.

Well, overall I've found that apps take longer to close down and a reboot takes longer than normal. I'd assume with the 3G S it would be the same, but faster lol.
