Say I drop my MBP and it becomes completely unusable or i spill water and it becomes non-responsive. Would Apple replace it with a new machine no questions asked? Is there any exclusion criteria?

In most cases they'll repair your existing computer, rather than replace it.

AppleCare+ for MacBook Air, MacBook, and MacBook Pro includes:
  • Three years (total) limited hardware warranty.
  • Three years (total) technical support.
  • Coverage for two incidents of accidental damage (subject to a service fee of $99 for screen damage or $299 for other damage)
so it's not good, better buy insurance from other source to cover all costs, replacement or even money back

I can only speak for my experience which is restricted to my iMac. My cord was running to the wall from my desk and my dog ran by and took it with him. Needless to say the computer went with the cord. Screen, back casing and one of the boards inside had to be replaced. I walked in, paid the deductible... Had a few laughs and came back to get my computer 3 days later. Worth every penny.

OK, in that case you're missing the word 'Neither' at the start of your sentence. The way you wrote it suggests the opposite of what you actually meant. But we agree; AppleCare does not cover theft.
