As the title suggests, if you get the iMac with the default RAM offering of 8GB, does it come with 2GB in each of the 4 RAM slots, or does it come with 4GB in each of 2 slots and 2 empty slots?

2x4gb here too - 27" 2020 model. I had an upgrade of 2x32gb put in, but I'm informed it's best to remove the original 8gb as it may be slowing down the upgrade RAM, to be honest, I can't tell!

2x4 GB but you have to remove them if you upgrade RAM. iMac doesn't like mixing DRAM manufacturer, capacity and speed.
