I had ordered a whole bunch of glass screen protectors from different sources to make ensure atleast one of them gets delivered in time for the new iPhone launches. Now I have these extra screen protectors I am not sure what to do with and I don't want to return them. I will keep them for when the current protector gets any damage or the oleophobic coating starts to wear off.

So I was wondering, how long can you store them? Is the adhesive going to get less effective over time? What about the oleophobic coating? Or would they be just fine in long term storage?
 
For a very long time.
The coating doesn't really age, it only wears off with use. The adhesive lasts for years if left in its packaging stored in a normal indoor environment. I wouldn't worry about it.
