Apple is supporting its iPhones for at least 5 years. I know that. But for a phone that has a release date of 2019 and bought new from Apple in 2021, how to count the 5 years? Should I expect it to get updates only till 2024? Or 2026?

You count from the launch year, in this case 2019. So at least 5 iOS iterations from iOS13 (launch iOS version). So that means iOS18 at the least. Since the 6s still gets iOS15, that could mean the iPhone 11 can potentially get iOS19 (2025 - 2026).
2024 for major iOS updates but it's likely to be even longer. It has 4GB RAM. The 6s and SE1 were the first to have more than 1GB RAM, I believe, which is probably a major factor in them being compatible with iOS 15.
Don't worry about it, I replaced my iPhone6s with an 11 back in January mainly out of boredom. These phone last a long time if treated well and you'll likely replace yours before it is declared obsolete.
