Just wondering how long Big Sur will be supported or should I be in a hurry to attempt to get Monterey running on my unsupported 2013 MacBook Air?

A standard macOS release is officially supported with updated for about 2 to 3 years after introduction. So Big Sur should be good at least until 2023.

One question: how do you install Monterey on unsupported Macs?
Because I did follow dosdude's website and past macOS Catalina 10.15 he doesn't make patches anymore for older Macs.

there's a whole section here under Monterey, titled unsupported mac's with instructions on making the tool needed. I am considering doing it, however my air works so good on Big Sur.... not sure if I want to risk missing something and making a issue.

You will get security updates for another 2 years (as stated by @opeter).
Unless your software is not supported, I would leave it on BS.

There are a lot of problems people are reporting with Monterrey.
If your Mac is not officially supported, there is a chance you would have more problems.
